Winemaking: Hand picked during the first week of September, with a meticulous selection of grapes in the vineyard. Cryomaceration of whole grapes in the press with dry ice. The must is left in natural decantation for 72 hours at 41F° then it is cleaned up. The fermentation takes place at a controlled temperature. Subsequently the wine is kept for 6 months on the fine dregs with several bâtonnage. The wine aging 6 months in stainless steel tanks and 4 months in bottles.
