Winemaking: Hand picked during the first week of September, with a meticulous selection of grapes in the vineyard. Soft pressing. After the must is left in natural decantation for 72 hours at 41° F, then it is cleaned up. The fermentation takes place at a controlled temperature. Subsequently the wine is kept for 3 months on the fine dregs with several bâtonnage. The wine aging 6 months in stainless steel tanks and 3 months in bottles.
