Winemaking: Hand picked at the end of September, with a meticulous selection of grapes in the vineyard. Fermentation at controlled temperature in stainless steel, with several manual fulling and pumping over. After racking off, the wine is kept on the fine dregs for 6 months, during which time malolactic fermentation takes place. The wine aging for 6 months in stainless steel and other 6 in bottle before selling.
